This well-known raw fish dish is popular all throughout Latin America and the Caribbean, but Peruvians are especially loco for it, having created a holiday in its honor. The recipe consists of raw chunks of corvina or sebo fish, marinated in freshly squeezed bitter orange or key lime juice, with sliced raw red onions, chili peppers, salt and pepper. It's typically served at room temperature with corn and sliced sweet potato, though there are many variations of the traditional recipe to try.
