Giovanni's Shrimp Truck - Oahu, Hawaii

Despite its grungy outward appearance, Giovanni's Shrimp Truck is not an abandoned vehicle. Instead, it's one of the longest-running food trucks in Hawaii, having started operating in 1993 out of a 40-year-old converted bread truck and since gaining a very loyal local following. It's especially famous for its incredibly flavorful sauteed garlic butter shrimp plates. And the writing on the truck? They're the signatures of all the customers they've ever served.
