Who knew a frozen food brand would eventually turn into the US's first organic vegetarian drive-thru restaurant? That's what Amy's did. The brand has been in business since 1987, selling non-GMO, vegan and vegetarian frozen meals to health-conscious eaters across the country, and now it's getting rave reviews as the first fast-casual restaurant of its kind in Rohnert Park, California. After three years in business, it's already planning to open multiple other locations. The thick, handmade vanilla, chocolate and strawberry milkshakes are organic and , and they also offer non-dairy milkshakes for vegans.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
