Anyone who grew up in Chicago will always have a place in his or her heart for Portillo's. The Midwest fast food chain is famous for its Chicago-style hot dogs, Italian beef sandwiches and char-broiled burgers, among other things—but also for its famous chocolate cake. One day, the owners decided to put a slice of chocolate cake into their blended milkshakes, and once it was done, there was no going back. It's now a cult favorite on the menu and as decadent as you can possibly imagine. You can also get regular chocolate, vanilla or strawberry shakes if you're not feeling all those calories.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
