Cook Out is a Southern fast food chain that was originally founded in Greensboro, North Carolina in 1989. Now, it counts multiple locations in at least 10 states and has a huge cult following, thanks to its winning menu of delicious grilled burgers, hot dogs, chicken sandwiches and North Carolina BBQ. It also happens to sell some of the best drive-thru milkshakes, which come in more than 40 flavors. They're extremely thick and generously garnished with add-ins, so you might have to eat them with a spoon until they melt a bit. Oh, and they added a Bible verse to their styrofoam cups with a "God Bless America" next to it, which is a clear indication that you are in the South.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
