Restaurant Seating Almost Always Follows A Rotation

In the majority of restaurants, seating is done on a rotating basis. This is to ensure a fair number of tables for each server, who are assigned to different sections of the restaurant. Oftentimes, when there are booths, back tables with more intimacy or window tables with a view, people will ask to sit there. If you get sat elsewhere, don't just get up and move to the table you want. Consult the host or hostess first, and if the table is not reserved, they may be able to accommodate you. Be aware, however, that this often results in skipping a server in the rotation and/or double seating another (when a server gets sat two tables at once). In the latter case, your server might not greet you right away because they just got a table before yours. Be understanding—especially if you got the table you wanted.
