Aunt Jemima

With her popular syrup and pancake mix, Aunt Jemima always had a place at your childhood breakfast table. The brand name came from an 1875 song called "Old Aunt Jemima," which was often played in minstrel shows (a 19th century form of entertainment involving blackface and racial stereotypes). Former slave Nancy Green became the first woman to play Aunt Jemima in 1893, helping sell thousands of pancake mixes. In recent years, however, the character has been fraught with controversy due to her roots in historic racism and plantation nostalgia.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
