V-Day Dinner: How to Make Restaurant-Worthy Steaks at Home

Know the Levels of Doneness

In order to ensure your steak is cooked to the proper level of doneness (to your liking), you need to be able to identify those stages. These are the indicators & temperatures for steak doneness:

  • Rare: Seared around the edges with a red interior (125°F)
  • Medium Rare: Seared outside with a pinkish-red interior (135°F)
  • Medium: Brown meat around a pink center (145°F)
  • Medium-Well: Faint pink color throughout (150°F)
  • Well: Solid brown color throughout (160°F)

The USDA recommends steaks be cooked to medium (145°F), but high-end steakhouses will agree that medium-rare yields the best quality and flavor. If you're worried about undercooked meat, just make sure you get a steak with lots of marbling (ribeye, T-bone), which will still taste amazing if you have to cook it a bit more.

Ingredients

  • 1 onion
  • 5 - 6 thick rashers bacon
  • 1/2 lb sausage meat
  • 1/2 cup tomato paste
  • 2 cloves garlic, diced
  • 2 bell peppers, diced
  • Salt
  • 1 cabbage head


Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
  6. Enjoy!
