But one thing that isn't so great about shredded meat is the time and effort it takes to do the shredding (even if you do have those Wolverine-style shredding claws). If you're like us, you're probably used to shredding meat with a pair of forks or your bare hands. These are some of the simplest methods, but, depending on how much meat you have to shred, it can seem like an endless chore—not to mention it wears your hands out pretty fast. So what's the trick?

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
