Conch Salad - Bahamas

Conch salad is made with raw, white meat that comes from the spiral shell of the Queen Conch, which is currently more abundant in the Bahamas than in most other areas where the species exists. The actual meat has a similar chewiness to calamari and a mild, sweet flavor. However, it's quite tough just out of the shell and needs to be properly tenderized before consuming. The salad is prepared just like ceviche in Latin American countries, with raw Conch meat, finely chopped bell peppers, onions and tomatoes in a marinade of fresh lime juice, sour orange juice and spicy goat pepper. (FYI, it's pronounced "conk" not "conch.)

Did you know you can toast sweet potato slices... and it's absolutely delicious!

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
