Cook for around 20 minutes at 400°F, basting the meat often and turning it over halfway through cooking. When it is cooked, remove from the oven, season with pepper again and then let rest, covered, for about 10 minutes—this is very important! You don't want to cut into the meat early, otherwise you'll release all its flavorful juices, and it could dry out.

Serve with roasted potatoes, vegetables or a garden salad.
