Fresh Or Frozen?

If a turkey is labeled "fresh", it means it has never been chilled at lower than 26°F (the freezing point for turkey). These turkeys should only be refrigerated and for no more than a couple days, so if you buy one of these, don't do it too far in advance.

Frozen turkeys are, as can be expected, stored in a frozen environment. These are generally the cheapest and can be kept the longest, but the defrosting process can be long: you should move it from the freezer to the refrigerator at least 3 days in advance (it can take up quite a lot of space!). Keep in mind, too, that the bigger your turkey is, the more time it will need to defrost.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
