Add Mushrooms or Onions
Finally, if you haven't managed to work out all those lumps, and don't have the time or energy to start over, disguise them! Dice up some mushrooms or onions, throw them into the gravy, and let it cook down for a little bit. They'll add texture to the gravy so that the lumps aren't unexpected or unpleasant, and the veggies will also pump up the flavor.
