Okonomiyaki - Japan

Okonomiyaki is Japan's version of a savory pancake or pizza. While it can be ordered plain, it's more fun to eat when loaded with meat and/or cheese, fried noodles (which would make it modan-yaki), thick and sweet worcestershire-like sauce, Japanese mayonnaise, bonito flakes, seaweed flakes, and pickled ginger, among others. There are countless variations of the dish throughout Japan, although one characteristic remains the same: it's pure comfort food.
