Unstable Temperatures

There is a science to where you store your canned goods—it should be neither too hot nor too cold, and should never fluctuate between the two. The ideal temperature for storage is between 50 and 70 degrees. Above this temperature, nutrients are lost and more importantly, there's a higher risk of harmful bacteria growth. Freezing temperatures cause the water content of the can to freeze and expand, which can break the seal. Store your canned goods in a cool, dry place away from pipes or heating devices.
