Not making adjustments at higher altitudes

If you ever find yourself attempting to use a pressure cooker at higher altitudes, you need to keep a few things in mind:

  1. The pressure is lower at higher altitudes.
  2. The boiling point will be lower.
  3. Food will take longer to cook.

If you don't adjust cooking times at higher altitudes, your food will likely be undercooked. Always remember to tack on extra time, to compensate for the lower pressure and lower temperature. A good rule of thumb is to increase the cooking time by five percent per every 1,000 feet above 2,000 feet elevation.
