Tuesday (B): Summery fresh tomato soup

Tomato soup is a wonderful dish to enjoy in the summertime because tomatoes are actually in season! Serve with some crusty bread on the side for a light weeknight dinner. 

Serves 6

3 lbs fully ripe tomatoes, chopped
1 1/2 carrots, peeled and roughly chopped
1 1/2  celery stalks, chopped
1 1/2 onions, peeled and chopped
1-2 garlic cloves, peeled and chopped
4 1/2 tbsp olive oil
2 3/4 cups vegetable stock
1 bay leaf
1 tsp Italian herb seasoning
2 pinches of sugar
Salt, pepper

Storage: 3 days in an airtight container in the refrigerator; can also be frozen. Don't forget to set aside about 3 large ladles worth of the soup for the next recipe.
