Pumpkins usually call three things to mind, jack o'lanterns, pie, and lattes; however, they are an excellent source of vitamins and minerals, and make a tasty addition to pasta sauces, casseroles, and the like. To prepare your pumpkin in the microwave, first wash and dry it. Cut it in half and scoop out the seeds. Then, cut the pumpkin into smaller pieces and put it in a microwave-safe dish and cover it. You'll need to heat it on high for at least 15 minutes, making sure to rearrange the pieces every so often to guarantee even cooking. It's ready when a fork can easily pierce the flesh.
