Butternut Squash
Butternut squash is amongst the most nutritious foods, and has a sweet and buttery taste. It makes a terrific sweet potato substitute, and making it in the microwave is easy as pie. First, wash and dry the squash, then cut it in half and scoop out the seeds. Place both halves in a microwave-safe dish, cut sides down. Cover the squash and microwave it on high for about 10 minutes. Your butternut squash is ready to eat when it's fork-tender. Alternatively, you could peel it and cut the squash into peels. Microwave the cubes in a covered bowl for 5 minutes.
