Spaghetti squash has grown increasingly popular in recent years because of its low carb and calorie count. It gets its name from the fact that the flesh looks similar to spaghetti when cooked, and it's often used as a pasta alternative. Preparing this squash in the microwave couldn't be easier. Simply wash and dry it, then cut it in half and scoop out the seeds. Place the cut sides on a microwave-safe dish and add a little more than 1/4 cup of water or broth. Heat it up on high for about 12 minutes. You'll know the squash is ready when you can drag a fork across the flesh and it pulls away in strings.
