Use More than One Cheese

Even though it's not called 'macaroni and cheeses,' you definitely want to incorporate more than one kind. We suggest mixing cheeses with a softer flavor with others of a sharper, more piquant character. Remember that there will be cheese in the sauce, crusty grilled cheese on the top (if you're baking it)—cheese everywhere. And that's the whole point.
