Large, beautiful goose eggs are edible and have a strong taste. If you're able to get your hands on some and want to cook them, you should allow for at least 10 minutes of cooking time. Female geese only lay eggs from January to June and, compared to hens, they produce a much lower amount—around 40 eggs per year. If you want to try them, you might be able to find them in select delis or order them online directly from local farmers.
