Cooking with ghee - 11 recipes

The recipe for ghee, or clarified butter, is actually surprisingly simple. When I started making my own ghee at home, it elevated my Indian cooking to a whole new level. If you do decide to go the homemade route, ghee can be kept in a jar in your fridge for as long as you would keep butter, probably even longer! But if you don't have the courage to make it yourself, don't fret, because store bought ghee is just as good. So if you've ever find yourself wondering why sometimes your Indian dishes don't taste as authentic as you'd like, or that they’re missing something that you just can’t seem to put your finger on, then ghee is the secret ingredient that you have been missing.

Ingredients

  • 5 large potatoes
  • 1/2 cup parsley
  • 2 cloves minced garlic
  • 1/2 cup cilantro
  • 2 cups shredded cheese
  • 1 cup milk
  • Sour cream


method

  1. Boil and drain the potatoes
  2. In a mixing bowl, combine the potatoes with parsley, minced garlic, cilantro,  shredded cheese and milk.
  3. Mash the mixture thoroughly. 
  4. Shape into palm-sized balls, then flatten on a sheet pan
  5. Put in oven for 20 min at 355° F
  6. Layer, spreading generously with sour cream
  7. Garnish, and enjoy!
