Endive Salad with walnuts and smoked salmon

Wash and cut endives into pieces
- 4 endives
- 4 slices of smoked salmon
- 1/2 cup walnuts
- olive oil
- balsamic vinegar

Slice the zucchini into slices using a slicer, salt them and allow to drain for an hour
- 4 zucchini
- 2-3 cloves of garlic
- olive oil
- lemon juice salt
- pepper
- basil

Roasted tomatoes with goat cheese and basil coulis
- 8 roma tomatoes
- scant 1/4 cup olive oil
- 1 tbsp sugar
- 1 sprig rosemary
- 1.5 oz fresh goat cheese
- 1 dozen sprig of basil
- Salt and pepper
Pasta Salad with Mozzarella and Ham

Cook pasta until al dente in salted water according to the package directions
- 10 oz spiral noodles
- 8 oz (about 2 cups chopped) fresh button mushrooms
- 1/2 cup (2 oz) mozzarella
- 4 slice (s) of ham
- 10 cherry tomatoes
- 1/2 cup Parmesan cheese
- 2 tbsp butter
- 4 tablespoons of olive oil
- 1 tablespoon balsamic vinegar
- 1 tbsp mild mustard
- 1 tablespoon of herbs de provence
- salt Pepper

- scant 1 cup heavy cream
- 3/4 cup grated Comté cheese
- 1/3 cup toasted pine nuts
- 2 cloves of garlic
- pepper
- Fresh herbs: mint, basil, cilantro, parsley, chives, dill ...
Duck and Shallots

- In a saucepan, over high heat, melt 2 tbsp butter and brown the shallots
- - 16 duck breasts,
- - Scant 1/2 cup Madeira wine,
- - 11 tbsp butter (softened 7 tbsp + 2 tbsp + 2 tbsp)
- - 1 cup of chicken stock
- - 6 shallots, peeled and minced,
- - 1 tsp granulated sugar mixed with salt and pepper......................

- 2 beets
- 1 large carrot
- 1 1/2 inch piece of ginger (more depending on you preference)
- *optional: if you like sweeter juice try adding an apple (though the carrot and beets are already sweet)
