Italian Pizza

Preheat oven to 425°F /220°C
- 1)1 individual store-bought pizza crust
- 2)1 plum tomato, seeded and roughly chopped
- 3)1 clove garlic, chopped
- 4)2 tbsp (30mL) fresh basil, roughly chopped
- 5)Salt & Pepper
- 6)1/4 cup (60mL) Canadian Provolone, grated
- 7)1 1/2 oz (45g) fresh Canadian Mozzarella, sliced
- 8)2 tbsp (30mL) shaves of Canadian Parmesan
Cantonese-style Mooncake with Mung Bean Filling

Syrup: Add in all ingredients of Ingredient 1 in a medium sauce pot
- Syrup (or Golden syrup):
- 1)4 cups sugar (800g), 1¼ cup water (290g), 2 large lemons cut into cubes, 2 tbsp white vinegar;
- 2)1/4 tsp baking soda, 2 tsp water, mix well;
- Mung bean filling:
- 3) 1 package of split mung bean husked (400g);
- 4) 1 1/4 cup sugar (260g), 3 tbsp corn starch, 4 tbsp condensed milk, 1/2 cup corn oil (90g);
- Crust:
- 5) 1/2 tsp baking soda, 1 tbsp water;
- 6) 2/3 cup syrup, 1/4 cup corn oil (48g);
- 7) 1.5 cup all-purpose flour (235g);
- Egg wash:
- 8) 1 egg yolk and 1 tbsp water, mix well.
Garlic Chive Turnovers

Dough: Spread the flour in a large bowl and make a well in the middle
- 1)7 oz (200g) all-purpose flour
- 2)3/8 cup (90ml) hot water (above 160°F/70°C)
- 3)2 tablespoons (30ml) cold water
- 4)2 eggs, beaten
- 5)4 oz (115g) shrimp, shelled, deveined, and chopped into small pieces (pea size)
- 6)3 oz (85g) garlic chives, cut into ¼-inch (6mm) pieces.
- 7)1 teaspoon vegetable oil for cooking the eggs
- 8)1 teaspoon sesame oil
- 9)2 teaspoons soy sauce
- 10)2 tablespoons vegetable oil for pan-frying
- 11)1 teaspoon Zhenjiang (Chinkiang) vinegar
- 12)Salt and freshly ground white pepper
Hakka Salted Egg Steamed Pork

Once the pork is minced, mix well with the corn starch, soy sauce, sesame oil, salt and pepper
- 1)3-4 salted duck eggs, raw
- 2)500-600g pork collar or shoulder, hand minced preferred
- 3)2 teaspoons corn starch
- 4)2 tablespoons light soy sauce
- 5)3 teaspoons sesame oil
- 6)salt and freshly ground white pepper to taste
- 7)coriander, sliced spring onions for garnish, optional
Stir-Fried Beef with Green Peppers

This dish goes well with rice or noodles
- 1)10 oz (285 g) flank steak, trimmed
- 2)5 oz (140 g) shishito peppers, tops removed
- 3)2 scallions, cut into 1-inch pieces
- 4)1 one-inch piece ginger, thinly sliced.
- 5)1 clove garlic, minced
- 6)1 teaspoon Shaoxing wine
- 7)1 teaspoon dark soy sauce
- 8)1 teaspoon light soy sauce
- 9)½ teaspoon Zhenjiang (Chinkiang) vinegar
- 10)¼ teaspoon sugar
- 11)3 tablespoons vegetable oil for velveting
- 12)1 tablespoon vegetable oil for stir-frying
- 13)Salt and freshly ground black pepper
- For the marinade:
- 1)½ teaspoon light soy sauce
- 2)½ teaspoon dark soy sauce
- 3)½ teaspoon baking soda
- 4)¼ teaspoon sugar
- 5)¼ teaspoon salt
- 6)¼ cup (60 ml) water
- 7)1 egg, beaten
- 8)1 teaspoon potato starch or cornstarch
Glutinous Rice with Chicken

Steam the rice in a steamer lined with cheesecloth for 30-40 minutes, or until soft
- 1)8 oz (230 g) glutinous rice, soaked in warm water for 2 hours.
- 2)5 oz (140 g) chicken thigh or breast meat, cut into ½-inch (1.3 cm) cubes
- 3)2 oz (60 g) shelled fava beans, from 8 oz (225 g) fresh fava beans in the pod
- 4)2 Chinese sausages, quartered lengthwise and cut into ½-inch (1.3 cm) pieces.
- 5)1 glove garlic, minced
- 6)1 scallion, thinly sliced
- 7)2 teaspoons soy sauce
- 8)2 tablespoons water
- 9)1 tablespoon vegetable oil
- 10)¼ teaspoon salt
- 11)Freshly ground white pepper
- 12)Banana leaves cut into 4 pieces of 12 x 10 inch (30 x25 cm) rectangle
- For the marinade:
- 1)1 teaspoon soy sauce
- 2)1/2 teaspoon grated ginger
- 3)1/2 teaspoon Shaoxing wine
- 4)1/2 teaspoon cornstarch
Steamed Butterflied Shrimp with Minced Garlic

- 1)14 oz (400g) whole Gulf Shrimp, or any other high-quality variety
- 2)4 – 6 garlic cloves, finely minced
- 3)1-inch ginger, cut into thin matchsticks
- 4)1 scallion, thinly sliced
- 5)1 tablespoon Shaoxing wine
- 6)2 teaspoons soy sauce, divided
- 7)½ teaspoon salt
- 8)2 tablespoons vegetable oil
Tuna Feta Salad

Cucumber peeled, seeded and cut into 1-inch chunks
- 1)80-100g Canned tuna fish
- 2)4 pcs Romaine lettuce
- 3)80g Cucumber
- 4)½ pc Tomato wedges
- 5)10-12 pcs Olives, cut into rings
- 6)50g Feta
- 7)Onion
- 8)Salt & Pepper to taste
- Oregano Vinaigrette:
- 1)2 tbsp Olive oil
- 2)1 tbsp Lemon juice
- 3)½ tsp Dried oregano (½ tbsp, if fresh one used)
Roasted Garlic and Herb Potato Wedges

This garlic and herb flavored oven roasted potato wedges are so delicious and easy to make
- 1) 4 medium potatoes (660g);
- 2) 3 tbsp olive oil, 4 tsp freshly minced garlic, 1 tsp salt, ¼ tsp ground black pepper;
- 3) 1/3 tsp thyme, 1/3 tsp rosemary, 1/3 tsp oregano, 1/2 tsp paprika.
Homemade Bubble Tea

Boil 6 cups water in a medium pot
- 1) 100g dry tapioca pearls, 6 cups water;
- 2) 2 black tea bags, 1 cup boiling hot water;
- 3) 1.5 cups milk, 1.5 cups water, 3 tbsp condensed milk, ¼ cup table cream (18% fat), 3-4 tbsp sugar.
