Dry roast all ingredients seperately
- Red chillies - 2 cup
- Urad dal - a little less than 1/2 cup
- Chana dal- a little less than 1/2 cup
- sesame seeds - 1/8 cup
- salt

Coconut milagai podi

Roast dry ingredients separate Roast coconut seperate
- Coconut - 1 shredded
- Red chillies - 6 to 8
- Urad dal- 1/8 cup
- Hing

Vauthu araithai kulambhu

Cook vegetables and dal separately
- coconut - 1/4 cup
- coriander seeds - 1 1/2 tablespoon
- tuar dal - 1 1/2 tablespoon
- boiled tuar dal- 1/8 cup
- Sambhar powder - 1 spoon
- salt - 1/2 sppon
- Tamarind - 1 inch ball
- Any vegetable (Radish, cauliflower, carrot, etc)

- Mustard seeds- 1 tsp.
- Ural dal. -1/2 cup
- Channa dal -1/4 cup
- Red chillies- 30
- Hing
- oil- 1 tsp.
- salt
- sesame seeds- 1/2 cup
Upma kollukkattai

Wash rice in water. Dry with a cloth
- Raw rice - 1 cup
- Water - 1 1/2 cup
- Mustard seeds
- Ural dal (broken)
- Green chillies
- Ginger
- Coconut
- Salt
- Pepper-jeera powder
- Curry leaves
Idli batter

Soak rice and dal separately for 4-6 hours
- Rice - 4 cups
- Ural dal(whole) - 1 cup
- Salt
Dosa batter

Grind dal and fenugreek seeds in grinder
- Raw rice- 2 cups
- Parboiled rice- 2 cups
- urad dal- 1 cup
- Fenugreek seeds- 1 tablespoon

Heat pan till sprinkled water makes a sound
- Dosa batter
- oil or ghee
- toppings:
- 1. onion and milagai podi
- 2. boiled potatoes, onion and green chillies sauteed in oil.
