Raspberry Freezer Jam

Wash and prepare glass or plastic containers to store jam in
- 3 1/4 C. crushed raspberries
- 1/4 C. lemon juice
- 4 1/2 C. sugar
- 1 C. light corn syrup
- 1 box fruit pectin
5 minute GF, SF muffins

Quick and easy Gluten free muffins
- 1 C. nut butter (peanut, cashew, almond, etc)
- 2-3 very ripe bananas
- 2 eggs
- 1 tsp. vanilla
- 1-2 Tbs. honey
- 1/2 tsp. baking soda
- 1 tsp. apple cider vinegar
Summer Rolls

Set out all ingredients listed above
- 1 package round rice paper (the ones in the dry goods section)
- 1 head romaine lettuce torn into pieces
- 1 bunch fresh basil leaves (thai basil works best)
- 1 red pepper, cut into thin strips
- 1 carrot, cut into thin strips
- 1 cucumber, cut into thin strips
- 1 mango, cut into thin strips
- 1 avacado, cut into thin strips (squeeze a little lemon over it if you won't serve it right away)
Hoisin-Peanut Sauce

Place a small pan over medium heat
- 1 tsp. seasame oil
- 1 clove garlic, minced
- 1/4 C. light coconut milk
- 1/4 C. peanut butter
- 1/4 C. hoisin sauce
- 2 Tbs. rice vinegar
Slow Cooker Teriayki Chicken

Put everything except cornstarch and water in crockpot
- 1-1 1/2 lbs. Chicken breasts
- 1/2 C. sugar
- 1/2 C. gluten free soy sauce
- 3 Tbs. apple cider vinegar
- 1 clove minced garlic
- fresh cracked pepper
- 2 tsp. cornstarch
- 2 tsp. water
Pesto

Put basil and garlic in blender or food processor
- 2 C. fresh basil leaves, washed, firmly packed
- 2-4 clove garlic, peeled and crushed
- 1/2 C. olive oil
- 3 Tbs. pine nuts
- 1 C. fresh grated pramesan cheese

Peanutty Stir-Fry

Delicious peanutty stir-fry for any type of protein
- 1 can (14.5oz) chicken broth
- 1/4 C. peanut butter
- 2 Tbs. cornstarch
- 2 Tbs. gluten free soy sauce
- 1 Tbs. brown sugar
- 2 Tbs. oil
- 4 C. assorted vegetables
- 1 lb. protein (chicken, beef, seafood, tofu)
- 1.5 tsp. minced garlic
- 3/4 tsp. ground ginger
- 1/4 tsp. crushed red peper
- 2 tsp. seasame seed
