Rosemary Lemon Roasted Chicken Breasts

Moist, flavorful, easy, and tasty!
- 1-2 medium lemons, sliced
- 2 sprigs rosemary
- 2 garlic cloves, quartered
- 2 uncooked boneless skinless chicken breasts
- 1 tablespoon extra virgin olive oil
- 1 teaspoon kosher salt
- ½ teaspoon fresh ground black pepper
Baked Salmon with Blueberry Sauce

Healthy and tasty
- 2 wild salmon fillets, skin on
- 2 cloves garlic, grated or minced
- Blueberry Sauce:
- 1 Tbsp cornstarch or flour
- Juice from half a lemon
- 5 oz. fresh or frozen blueberries
- 2 Tbsp balsamic vinegar
- 1/2 cup low sodium chicken broth
- 1 tsp fresh thyme
- Black pepper to taste
Poached Fish with Garden Vegetables

This is a great method for preparing fish
- 1 medium sweet onion, sliced
- 1 can diced tomatoes with juice
- 1 cup water
- 1 large (or two small) yellow bell peppers
- 8 to 10 cherry tomatoes, halved
- 1 Tablespoon assorted fresh herbs (thyme, chives, tarragon, sage)
- 2 (6 ounce) filets of a firm, white fish
- Kosher salt and pepper
- 1 lemon, halved
Cheesy Hot Crab Dip

This stuff is ooey, gooey, and amazing
- 4 ounces cream cheese (1/2 block), softened (or use the whole thing!)
- 1/2 cup mayonnaise (or sour cream if you're not a mayo fan)
- 2 tablespoons worcestershire sauce
- 2 teaspoons hot sauce
- 3-4 cloves garlic
- pinch of cayenne
- pinch of dried mustard
- salt & pepper to taste
- 1/3 cup green onions
- 1 pound fresh cooked lump crab meat (fake crab meat works too)
- 1 lemon, juiced
- 1 cup monterey jack cheese (or any melty white cheese you like)
- 1/3 cup parmesan cheese
- 2 tablespoons Panko breadcrumbs, if desired

- 1 pound of bacon (or 1 pack)

- 3/4 cup all-purpose flour
- 2 - 3 egg whites
- 3/4 cup nonfat breadcrumbs or 3/4 cup lowfat breadcrumbs
- 2 teaspoons italian seasoning
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons onion powder
- 1/2 teaspoon salt
Pecan Pie Bars

A buttery shortbread crust that is baked and then topped with a honey-sweetened pecan mixture
- Base:
- 2 cups all-purpose flour
- 2/3 cup powdered sugar
- 1 cup butter, room temperature
- Filling:
- 2/3 cup butter
- 1/2 cup brown sugar, packed
- 1/2 cup honey
- 3 tablespoons heavy cream
- 2-1/2 cups pecans, coarsely chopped
- 3/4 cup pecans, finely chopped

- 1/4 cup granulated sugar
- 1 1/4 cups quick oats
- 1 cup semisweet chocolate chips

- 1 cup unsalted butter, at room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 3.4 oz. package vanilla instant pudding mix (almost the whole package, less a little bit)
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
Crustless Pumpkin Pie

This pumpkin pie is so tasty you won't even miss the crust
- Filling:
- 1 15 oz can of pumpkin
- ½ cup of sugar (or sweeten with a little Splenda to taste)
- 3 large eggs
- 3 tablespoons of honey
- 2 teaspoons of cinnamon
- ½ teaspoon of ground ginger
- ¼ teaspoons of cloves
- ½ teaspoon of allspice
- ½ teaspoon of nutmeg
- ¼ teaspoon of salt
- Streusel:
- ½ cup of unbleached flour
- ¼ cup of brown sugar
- 1 teaspoon of ground ginger
- 1 teaspoon of cinnamon
- ½ cup chopped pecans
