Chia Seed Pudding

This is a great go-to recipe
- 3/4 cup chia seeds
- 4 cups almond mill
- 2 vanilla beans (split down the center and seeds removed) or 2 teaspoons vanilla extract
- 6-8 tablespoons erythritol (like Swerve) or stevia to taste (pure stevia, about 1/2 teaspoon to start and add more if desired. If spoonable stevia — start with 2 teaspoons and add from there. If liquid stevia — start with 1 teaspoon and add from there)

- Salad
- 6 cups Organic mixed greens
- 2 cups Organic spinach
- 1 cup walnuts, whole or coarsely chopped
- 4 Handfuls Blackberries (for garnish)
- 1-2 Granny Smith Apples

Kung-WOW Chicken

Don’t let the list of ingredients scare you
- 2 tablespoons coconut oil
- 2 lbs organic chicken – cut into 1 cubes
- 1 organic red pepper (peppers are notoriously pesticide laden-go organic), chopped
- 1-2 teaspoons chili paste (check ingredients). Spice it up to your liking.
- 5 large mushrooms (optional- I chop them into a fine dice to get them past my kids)
- 1 small can water chestnuts, cut in fourths
- Fresh ginger, grated w/ a microplane (about 1 of a piece of ginger that has been peeled) NOTE: keep your hunk of ginger in the freezer in a ziploc bag. It is easy to peel and grate and it will last almost forever!
- 2-3 cloves garlic, put through a garlic press or finely diced
- 1/2 – 1 cup organic chicken broth
- 1/2 cup tamari
- 1 tsp sesame oil
- 1/4 cup organic peanut butter

- 2 1/2 cups almond flour (pictured with regular almond flour but can also be made with blanched almond flour)
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 1/2 - 3/4 cup erythritol (like Swerve), xylitol or stevia to taste (Stevia is not a 1:1 conversion, so you have to add according to your taste preference.)
- 1 organic egg
- 1 tablespoon vanilla
- 1 stick (8 tablespoons) organic butter
- 1 bar sugarless chocolate, chopped into chunks. You can use Simply Lite (Trader Joe's)
