Fennel Veloute Soup

By 750 International
Chop the onion, and in a hot soup pot with a knob of butter and the salt and pepper, cook it until it's transparent
- 1 bulb of fennel
- 2 potatoes
- 1 onion
- salt and pepper
- 1 knob of butter
- 2 oz heavy cream
- 1 vegetable stock cube
- olive oil to serve
Almond and Pumpkin Muffins

By 750 International
Beat the eggs with the brown and white sugar, and then add the maple syrup
- 1 1/2 cups of pumpkin puree
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 1 tablespoon maple syrup
- 2 eggs
- a handful of white raisins / sultanas
- 2/3 cup almond powder
- 1/2 cup oil or melted butter
- a pinch of salt
- 1 small plain yogurt
- 2 cups flour
- 1 heaped tablespoon baking powder
- 1 teaspoon baking soda
- powdered sugar to decorate
Spicy Shrimp and Rocket Sushi

To prepare the rice: Rinse the rice in cold water in a colander until the water is transparent and not white
- To prepare the rice:
- 3/4 cup sushi rice
- 1 3/4 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/4 teaspoon salt
- To prepare the sushi:
- 12 cooked shrimps
- Cayenne pepper
- a dash of fresh lemon juice
- 4 nori sheets (seaweed)
- a small handgul of rocket leaves (arugula)
Light Peach Cake

Preheat your oven to 395F
- 2 eggs
- 2 tablespoons of sugar
- 2 teaspoons vanilla essence
- 1 cup non-fat yogurt
- 1/4 cup cornstarch
- 1 tablespoon baking powder
- 1 can of peaches (in syrup)
Yogurt Cake

By 750 International
In a large bowl, add the yogurt and flour and mix well
- 3 eggs
- 1 yogurt (keep the yogurt tub!)
- 3 yogurt tubs of flour
- 2 yogurt tubs of sugar
- 1 yogurt tub of vegetable oil
- 1 heaped tablespoon baking powder
Rabbit with Tomatoes

By 750 International
Cut the rabbit into pieces and coat lightly with flour
- 1 rabbit
- 1 large can of tomatoes
- 6 spring onions, sliced thinly
- 2/3 cup red wine
- 1 small can of white mushrooms
- 1 teaspoon each of fresh thyme, basil and oregano
- a knob of butter
- some flour to coat the rabbit
Cod Fish with Grapefruit

By 750 International
Place the fish in a microwave-safe plate
- 1 1/2 cups long-grain rice, cooked and cooled
- 2 fillets of cod fish
- 1 pink grapefruit
- 2 tablespoons pine nuts
- 1 shallot or small onion
- 1 yellow bell pepper
- 1 red bell pepper
- a small can of corn
- For the dressing: olive oil, vinegar and a dash of white wine, mixed together
Crab Salad with Citrus Fruit

By 750 International
Peel the oranges and cut into quarters
- 1 cup canned crab meat
- 1 ripe avocado
- 2 small oranges
- 1 cucumber
- fresh parsley and chives, chopped finely
- salt and pepper
- a few rocket leaves
- 1 tablespoon mayonnaise
Fish Curry in a Wok

By 750 International
Wash, peel and cut all of the vegetables into small pieces
- 1 carrot
- 1/2 fennel bulb
- 1 small turnip
- 1/2 celeriac root
- 1 onion
- 1/4 cup water
- 1 pound of white fish
- 1 shallot
- 2 cloves of garlic
- 1 spring onion
- 1 tomato
- 1 bunch of fresh cilantro
- 1 large can of coconut milk
- 1 bay leaf
- 2 tablespoons peanut oil
- 1 tablespoon curry powder
- a pinch of cumin
- 1/2 teaspoon cumin seeds
- salt and pepper
- chilli powder (according to taste)
Calamari Risotto

By 750 International
Wash the calamari well, and slice it into 1 inch thick circles
- 2 1/2 cups risotto rice (Arborio rice)
- 1 pound calamari
- 6 tablespoons olive oil
- 2 cloves of garlic
- 1/4 cup butter
- 2 pounds canned, chopped tomatoes
- 4 cups water or fish stock
- chopped fresh parsley
- salt and pepper
