Ingredients
- 1lb chicken breasts sliced into strips
- 1 sweet onion sliced
- 1 red or green pepper sliced
- 1 T oil
- 1 t cumin
- 1 t oregano
- 1 t granulated garlic
- dash cayenne pepper
- 2 T lime juice
- 1 T soy sauce

Preparation
Step 1
Mix seasonings with chicken.
Step 2
Sautee onion and pepper in oil. Set aside.
Step 3
Sautee chicken, add lime juice and soy sauce.
Step 4
Add in onions and peppers.
Step 5
Serve with warm tortillas, salsa, cilantro, sour cream, lettuce, cheese, and guacamole.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
