Awesome black beans, light cream cheese, good-for-you tomatoes and yummy cheese!

Ingredients

  • 8 ounces light cream cheese
  • 1 cup black beans - cooked and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (four cheese, Mexican, cheddar and mozzarella
  • or blend you prefer)
  • 1t curry powder
  • 1t sweet chili pepper blend
  • 1T Italian seasoning

Preparation

Step 1

Mix all ingredients together in bowl

Step 2

Place in refrigerator until well chilled

Step 3

Serve in. Dip bowl with crackers or corn chips

  2. Slice baguette down the middle (like a sandwich)
  3. Layer cheddar, blue, and mozarella cheese inside the bread
  4. Top with sun-dried tomatoes
  5. Close baguette and wrap with bacon strips
  6. Put in oven and bake for 20 minutes at 350 degrees
  7. Slice and serve!
