The recipe for tzatziki is so simple that once you've made it, you'll be able to do it a thousand times in your sleep. Tzatziki is a Greek dish, and its traditional use is as a side to eat your veggies with or a condiment to dip your bread in. But you can also think about tzatziki as a spread for sandwiches or wraps, or to top off blinis with smoked salmon for an original appetizer. The secret to making authentic tzatziki is to make sure to drizzle extra virgin olive oil on top, and to not be afraid of adding lots of fresh garlic! Be sure to use Greek yogurt when making tzatziki, because other types of yogurt can be too watery or runny. The final result should be a thick, luscious dip, highlighted by thin slivers of cucumber and tiny pieces of crushed garlic. A golden river of olive oil provides beautiful contrast to the creamy white yogurt. My favorite way to eat tzatziki is on its own, with some crusty bread to dunk in it, an icy glass of ouzo and a couple of green olives and grilled sardines. And preferably eaten somewhere on a Greek beach, in the afternoon summer sun. But that's not a requirement!
