Easy-As-Pie Pineapple Dole Whips

In the summertime, it’s hard to find low-calorie frozen treats that hit the spot. If you're craving a healthy, heat-proof snack, then this pineapple dole whip recipe is exactly what you need.
Disneyland park snacks are part of the fun. Their Dole Whip (a soft serve-like treat) is one of their most coveted confections. Thanks to baker Gemma Stafford, you don’t have to wait for your next Disney trip to give it a try. Pineapple dole whips are incredibly fast and easy to make yourself, requiring just two ingredients.
Here's what you'll need:
Ingredients
- 4 cups frozen pineapple chunks
- 1 cup low fat coconut milk (can substitute with almond milk, regular, etc)
Instructions
Using a food processor or blender, combine frozen pineapple chunks and coconut milk. Blend mixture until creamy, pausing occasionally to scoop down the pineapple.
Continue blending until the pineapple chunks are thoroughly mixed.
Serve immediately. Leftover dole whip will solidify when stored in the freezer.
