Venezuela - Cachapas

Made from masa harina, traditional corn flour, these delicious butter-and-cheese-filled cakes are both sweet and savory in flavor. Like the popular Venezuelan arepa, they're often sold as street food and can also be filled with roasted pork, chicken and avocado, black beans, fried pork chunks, etc. Similar in texture and shape to pancakes, they're cooked on a small, flat griddle and may include fresh ground corn in the batter, which slightly thickens them.
