Spicy food addicts will love this fiery hot sauce made with African bird's eye chili pepper. If there's a Nando's franchise in your area, you may be familiar with it, as the menu is based around peri-peri marinated chicken dishes. The sauce is believed to have been invented by Portuguese immigrants in South Africa, and it really packs a punch, with the main ingredients being peri-peri peppers, garlic and an oil or acidic base. Use it as a glaze or marinade for grilled meats and fish or as a spicy dipping sauce. Just a word of caution: it's not for the faint of spice!
Ingredients:
1 pound (450g) red chili peppers
4 garlic cloves, peeled
1/2 cup (10g) cilantro, chopped
1/4 cup (5g) basil, chopped
1/2 cup (60g) olive oil
4 tbsp lemon juice
1 tsp paprika
1/4 tsp salt
Instructions:
In a food processor or blender, add all the ingredients. Process until completely smooth, or if you prefer a sauce with more texture, pulse until it reaches the desired consistency.
