The Best World Sauces: How Many Do You Know How to Make?

Marinara - Italy

Marinara is one of those sauces we typically take for granted by buying the jarred kind from the store, but nothing compares to fresh, quality ingredients and that made-from-scratch flavor. Not only is it a super easy sauce to prepare, but also you can make a big batch of it at once and freeze any leftovers. The basic recipe uses tomatoes, garlic, onions, and herbs, with the optional additions of capers, wine, olives, etc. It's one of the most versatile Italian sauces and serves as a base for countless dishes.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 tbsp garlic, minced
  • 1/3 cup (80ml) white wine
  • 1 28-oz. (800g) can San Marzano whole tomatoes
  • 1 tsp dried oregano
  • 1 tbsp sugar
  • Salt and pepper, to taste
  • 2 tbsp fresh basil, finely chopped

Instructions:

  1. In a large saucepan, heat the olive oil over medium-high heat, and add the onion. Cook for about 5 min. until translucent, stirring occasionally.
  2. Add the garlic, and cook for 1 min. more. Add the white wine and let simmer until it's completely evaporated.
  3. Add the San Marzano whole tomatoes using your hands to crush them into the pan. Add the oregano and sugar. Season with salt and pepper to taste.
  4. Break up the tomatoes further with a wooden spoon if necessary, and stir in the fresh basil. Bring to a boil, then simmer over low heat for 30-45 min., stirring occasionally. Serve warm.
