This South American speciality is a light and delicious option that's perfect when you're on a diet. It's generally served with sweet potatoes on the side. To make ceviche at home, buy some fleshy white fish like cod. Cut into small cubes, then add a finely chopped red onion, the juice of a lime, fresh cilantro, minced garlic, a pinch of chili pepper, a bit of grated ginger and a drizzle of olive oil. Let sit in the fridge for at least 30 minutes before serving.

  • 4 Tortillas
  • Cheddar

METHOD:

  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
