When the Water is Boiling Again...

Once you've added all the pasta to the cooking water, it may take a minute or two to start fully boiling again. In this case, you can cover the pot with a lid, but you should remove it when the water starts boiling again. Unless you want your stove-top covered in a wet, starchy mess (the water may boil over out of the pot if the lid is left on).
