Sorry, health nuts. Rolled oats win over steel-cut in this department. They take less time to cook, and the final result is creamier, softer and more satisfying than the tougher steel-cut kind. Don't play around with the milk and water ratio—it should be 1:1 or at least more water than milk, and don't exclude one or the other. Use non-dairy milk, if necessary. Also, do not cook your oatmeal over high heat. You'll end up with burnt bits on the bottom. Don't forget the spices and even a bit of salt for better flavor.
