Tagine - Morocco
Not to be confused with couscous, tagine (or tajine) is a both an earthenware pot and the name of the famous stew-like dish that cooks inside it. Traditionally, the pot is placed over hot charcoal, allowing meats and vegetables to simmer slowly for hours in a flavorful broth. The dish comes in vegetarian, meat- or fish-based versions and can be found pretty much wherever you go in Morocco: at open-air markets, fancy and casual restaurants, cafés. And contrary to popular belief, tagine is meant to be eaten with bread (no couscous!) and without any utensils.
