Ropa Vieja - Cuba

Originating in Spain, ropa vieja is the national dish of Cuba and also popular throughout Spanish-speaking Caribbean countries and Latin America. Its name translates to "old clothes," which reflects the dish's shredded appearance, much like old, frayed clothes. Made from slow-cooked beef or pork until it's tender enough to shred, the meat is then cooked with tomatoes and a sofrito of onions, bell peppers and garlic. The flavorful dish is typically served with rice, beans, and fried plantains, making it a satisfying and filling meal.

Where to eat: Paladar Dona Eutimia in Havana is famed for its ropa vieja, which is made with succulent lamb and served in decent-sized portion.
