Lemon Garlic Grilled Zucchini

Zucchini contains lutein, an antioxidant that helps protect the eyes and skin against light damage. One cup of sliced zucchini has 20 milligrams of the stuff - which apparently, is about 33% of your reccomended daily allowance!

When cooking the veggie, it's best to consume it grilled as this retains its minerals and vitamins. Check out this grilled zucchini recipe, which incorporates a zingy lemon and smoky garlic marinade. It's the ideal summer side dish, and perfect for grilling season - plus lemon  is rich in vitamin C which works wonders to limit skin damage, and garlic contains allicin, which helps to kill the bacteria that causes acne. What have you got to lose?
