Homemade Protein Bread

This protein packed bread is ideal for all bread lovers who want to increase their protein content in the daily diet. The protein can contribute to muscle building and/or muscle maintenance, and the complex carbohydrates from the whole wheat flour and the fiber from the seeds, are very filling and curb cravings. 

Ingredients (for a loaf):

  • 3/4 cup cottage cheese
  • 6 eggs
  • 3/4 cup ground almonds
  • 3/4 cup ground flax seeds
  • 5 tbsp wheat bran
  • 2 tbsp wholemeal flour
  • 1 sachetbaking powder
  • 1 tsp salt

Instructions:

  1. Preheat oven to 350°F. Line a loaf tin with parchment paper.

  2. Mix the cottage cheese, eggs, and baking powder

  3. Add the almonds, flaxseeds, flour, wheat bran, and salt little by little. Mix.

  4. Bake for 70 mins. 

  5. Poke the loaf with a fork. If it comes out clean, it's ready.

  6. Enjoy with jam or cold cuts!

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
