Low Carb Veggie Tart

For this spicy veggie tart, you only need 6 ingredients! Serve with baby potatoes and a crispy salad. It really is the perfect lunch.

Ingredients (for 2 people):

  • 2 cups cottage cheese
  • 3/4 cup grated parmesan
  • 4 eggs
  • 1 small zucchini (sliced widthways)
  • A handful vine tomatoes (diced)
  • Salt and pepper
  • Dried Mediterranean herbs

Instructions:

  1. Preheat oven to 350°F.
  2. Mix the cottage cheese and Parmesan cheese together. Add the eggs and mix with an immersion blender so that a uniform mass is formed.
  3. Stir in the salt, pepper, and herbs. Pour the mixture into a tart dish and top with the sliced zucchini and diced tomatoes.
  4. If desired, sprinkle a little more parmesan on  the top.
  5. Bake in oven for 35 mins.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
