Weekend Breakfast Burrito

This weekend breakfast burrito recipe is the best way to kickstart your Saturday morning. It's filled with eggs, fresh veggies, and is fun and easy to make. The addition of spinach adds a little green into the mix, and research shows this leafy veggie can lower your blood pressure and help keep your heart working just right. 

While the burritos bake in the oven, you'll have time to brew a coffee or casually catch up on the news. Perfect!

Ingredients (for 6 people):

  • 1 tbsp butter
  • 8 eggs
  • 1/4 tsp black pepper
  • 2 cups diced bacon
  • 6 flour tortillas (8-inch)
  • 1 1/2 cups shredded Cheddar cheese
  • 1 cup spinach
  • 1 cup fresh tomato (diced)
  • 1 handful of parsley

Instructions:

  1. Preheat oven to 400°F. 
  2. Over medium-heat, melt the butter in a large skillet. Add the eggs, black pepper, and bacon. Cook and stir for 5 mins. until eggs are firm.
  3. Spoon the egg mixture onto a tortilla and top with a sprinkling of cheese, a handful of spinach, and 1 tbsp of diced tomato. Roll the tortillas up tight, and place them seam down into an ungreased baking dish.
  4. There should be a little cheese remaining. Sprinkle over the unbaked burritos.
  5. Out in the oven for 15 mins. The cheese should be gooey.
  6. Once ready, sprinkle over the parsley . Serve with sour cream and/or salsa.
