Scrambled eggs are a wholesome breakfast, that can be whipped up in a matter of minutes. Not only that, but eggs are packed with protein and if you add an additional superfood such as spinach, you've got a recipe for success.
Ingredients (for 2 people):
1 1/2 cups fresh baby spinach
1 tsp olive oil
1 slice whole-grain bread or sourdough bread (toasted)
2 eggs
Salt
Pepper
Instructions:
Heat the oil in a small skillet over medium-high heat.
Add the spinach and cook for 2 mins. until the spinach has wilted.
Put the spinach on a plate and set aside.
Clean the pan, add a little more oil, and place over medium heat. Add the eggs.
Cook for 2 mins. stirring to ensure even cooking.
Stir in the spinach, and season with salt and pepper.
