Banana Oatmeal Pancakes

These easy banana oatmeal pancakes are full of nutrients! Oats contain a type of soluble fiber which lowers blood glucose and cholesterol levels, so reduces the risk of heart disease and diabetes. Mixed with the bananas, they're sure to set you up for the day ahead. They're not only fluffy, but dairy free, naturally gluten free, and contain no added sugar. They're pancake perfection!

Ingredients (for 4 pancakes)

  • 2  bananas (ripe, best when they're turning)
  • 2 eggs
  • 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 1 1/2  cups rolled oats 
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • Olive oil

Instructions:

  1. Put all of the ingredients  into a blender and blend on high until everything is mixed and of a smooth consistency. Let the batter sit for 10 mins.
  2. Heat a medium-sized skillet on medium heat. Drizzle a little oil into it, and once it begins to smoke a little, laddle 1/3 cup of batter into the skillet. Cook for 3 mins. each side.
  3. The pancakes should be golden brown and are ready to be eaten. Enjoy with a drizzle of honey or more sliced banana.
