Ensalada Rusa: Russian Salad
Despite the name, this is a very Spanish salad.
Originally invented in Moscow by Belgian chef, Lucien Olivier, this salad surprisingly became a hit in Spain, and is guaranteed to be on tapas menus up and down the country.
In Spain however, a typical ensaladilla rusa will likely include peas, carrots, potatoes, and even tuna. In the south, they usually add shrimp and a hard boiled egg.
