The panettone of yesteryear was actually a hard, flat bread, with only a few raisins and no association with Christmas! That all changed in the 1920s, when Angelo Motti of the Motti food brand came up with a new panettone recipe that also incorporated a dome shape. In the 1970s, panettone was flooding supermarkets and, to keep up with demand, bakeries began to produce the bread by hand.
